Step-by-Step Instructions for Dark Chocolate Oat Bites
  1. Blend 2 cups of old-fashioned oats in a blender until fine powder to make oat flour.
  2. In a bowl, whisk together oat flour, 1 cup of old-fashioned oats, ⅔ cup shredded coconut, and ½ cup almond flour.
  3. Melt ½ cup coconut oil and ½ cup almond butter in a saucepan. Add ½ cup maple syrup and optional vanilla extract.
  4. Pour the warm mixture over the dry ingredients and mix thoroughly. Allow to cool to room temperature.
  5. Chop 1 cup dark chocolate chips and fold into the cooled mixture.
  6. Line an 8x8 inch square pan with parchment paper. Pour in the mixture and press down firmly.
