Step-by-Step Instructions for Banana Butterscotch Loaf
  1. Preheat your oven to 180°C (350°F) and grease a 9x5 inch loaf pan.
  2. In a large bowl, whisk together eggs, sugar, oil, mashed bananas, buttermilk, and vanilla essence until smooth.
  3. In a separate bowl, sift together flour, baking powder, and salt. Fold the dry ingredients into the wet mixture, adding coconut and walnuts.
  4. Pour the batter into the prepared pan and bake for 45 to 50 minutes until a skewer comes out clean.
