Preparation
- Prepare the Crust by blending raw walnuts, almonds, Medjool dates, figs, raisins, orange zest, and warming spices in a food processor until it reaches a sticky consistency. Press into the bottom of a springform pan.
- Make the Cranberry Layer by blending cranberries with coconut cream and sweetener until smooth. Pour over the crust.
- Prepare the White Chocolate Layer by blending coconut cream, coconut oil, and sweetener until silky. Optionally melt white chocolate and mix it in.
- Layer the white chocolate mixture over the cranberry layer, smoothing it out.
- Swirl the remaining cranberry mixture on top of the white chocolate layer to create a decorative design.
- Cover the pan and refrigerate for at least 6 hours or overnight to set.
