  • 1/2 cup Figs Substitute with more dates or raisins if not available.
  • 1/2 cup Raisins Additional dates can work just as well.
  • 1 tbsp Orange Zest Lemon zest can be used for a different citrus note.
  • 1 tsp Warming Spices (e.g., cinnamon) Adjust based on your preference.
Cheesecake Layers
  • 2 cups Fresh/Cooked Cranberries Frozen cranberries can be used without thawing.
  • 1 cup Coconut Cream Refrigerate ahead of time for best results.
  • 2 tbsp Coconut Oil Optional but adds creaminess.
  • 1/2 cup Sweetener (Maple Syrup or Agave) Adjust according to taste.

Method
 

Preparation
  1. Prepare the Crust by blending raw walnuts, almonds, Medjool dates, figs, raisins, orange zest, and warming spices in a food processor until it reaches a sticky consistency. Press into the bottom of a springform pan.
  2. Make the Cranberry Layer by blending cranberries with coconut cream and sweetener until smooth. Pour over the crust.
  3. Prepare the White Chocolate Layer by blending coconut cream, coconut oil, and sweetener until silky. Optionally melt white chocolate and mix it in.
  4. Layer the white chocolate mixture over the cranberry layer, smoothing it out.
  5. Swirl the remaining cranberry mixture on top of the white chocolate layer to create a decorative design.
  6. Cover the pan and refrigerate for at least 6 hours or overnight to set.
