Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the all-purpose flour, granulated sugar, baking powder, and a pinch of cardamom or cinnamon until well combined.
  3. In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract until smooth and well-mixed.
  4. Pour the wet mixture into the dry ingredients, stirring gently until just combined. Fold in the diced rhubarb.
  5. Using a scoop, form mounds of batter on the baking sheet, spacing them a few inches apart.
  6. Bake for 12 to 16 minutes until golden brown and a toothpick comes out mostly clean.
  7. While the fritters are baking, mix powdered sugar with a splash of milk or lemon juice to create the glaze.
  8. Once baked, brush the warm fritters with the glaze, allowing it to melt slightly into them.
