- Preheat your oven to 180°C (350°F) or 200°C (390°F) for non-fan assisted ovens.
- Lay out the puff pastry sheets on a clean surface and allow them to defrost slightly.
- Drizzle honey evenly over each pastry sheet.
- Sprinkle chopped walnuts, crumbled blue cheese, grated Parmesan, and thyme evenly across the pastry.
- Roll each puff pastry sheet tightly from one end to the other to create a log.
- Cut the log in half lengthwise and twist each half into a coil.
- Arrange the twirls on a lined baking sheet with a little space in between.
- Brush the surface of each pastry twirl with milk.
- Bake for 25 to 30 minutes until puffed and golden brown.
- Allow to cool slightly and sprinkle with extra thyme leaves before serving.
