  • 2 tablespoons Honey substitute with maple syrup for vegan
  • 1 tablespoon Sriracha adjust based on heat tolerance
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1/2 teaspoon Salt sea salt preferred
  • 1/2 teaspoon Pepper
  • 2 tablespoons Oil for searing
For the Salsa
  • 1 cup Fresh Diced Mango
  • 1/4 cup Cilantro chopped
  • 1/4 cup Red Onion soaked if pungent
  • 1 cup Bell Pepper any color, chopped
  • 1 lime Lime juiced
For the Creamy Sauce
  • 1/2 cup Mayonnaise spice with additional sriracha if desired
For Serving
  • 1 Avocado Avocado sliced
  • 2 cups Rice cooked, warm

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together soy sauce, honey, sriracha, garlic powder, paprika, salt, and pepper until well combined. Cut chicken into bite-sized pieces, marinate for 10 minutes.
  2. Heat oil in a skillet over medium-high heat. Add marinated chicken, cook for 6-8 minutes until golden brown and cooked through.
  3. In a mixing bowl, combine diced mango, red onion, bell pepper, cilantro, and lime juice. Toss together.
  4. In a small bowl, whisk together mayonnaise, sriracha, and honey until smooth.
  5. Layer warm rice at the bottom of each serving bowl, followed by chicken, mango salsa, avocado slices, and drizzle with creamy sauce.
  6. Serve warm, garnished with extra cilantro if desired, and enjoy your tropical experience!
