  • 1 tablespoon Toasted Sesame Oil
  • 1 teaspoon Asian Chili-Garlic Paste
For the Noodles and Garnish
  • 8 ounces Dried Thin Chinese Wheat Noodles
  • 1 small Cucumber Optional, cut into matchsticks
  • 1/4 cup Roasted Peanuts For garnish
  • 1 tablespoon Sesame Seeds For garnish

Method
 

Step-by-Step Instructions
  1. Prepare the sauce by combining minced garlic, ginger, and scallions with peanut butter, sesame paste, soy sauce, rice vinegar, and hot water. Whisk until smooth.
  2. Cook the noodles in boiling water for 2-5 minutes. Drain and rinse under cold water.
  3. Combine the cold noodles with the sauce and toss well. Add cucumber if desired.
  4. Serve garnished with scallion greens, crushed peanuts, and sesame seeds.
