Step-by-Step Instructions
  1. Begin by marinating the chicken thighs in buttermilk, seasoning with salt and pepper for flavor. Let marinate for at least 30 minutes.
  2. Remove the chicken from buttermilk, dredge in panko breadcrumbs, pressing gently to adhere well.
  3. Heat vegetable oil in a skillet to 350°F. Fry the chicken for 8-10 minutes until golden brown and cooked through.
  4. Whisk together flour, cornmeal, sugar, baking powder, and salt in a bowl. In another bowl, mix buttermilk, egg yolks and melted butter, then combine with the dry ingredients and fold in whipped egg whites.
  5. Preheat waffle iron and grease it lightly. Pour batter into the iron and cook for about 5 minutes until golden brown.
  6. Serve the waffles topped with fried chicken, drizzle with spicy honey, and garnish with jalapeños.
