Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine cream cheese, egg, crème fraîche, garlic, parsley, Old Bay seasoning, and lemon zest until smooth. Fold in crab meat and crushed crackers.
- Pat salmon fillets dry, make a slit down the center, and season both sides with salt and pepper.
- Stuff each salmon fillet with about ⅓ to ½ cup of crab filling.
- Place stuffed fillets on prepared baking sheet and bake for 15-18 minutes until the internal temperature reaches 120°F (49°C); broil for a golden finish.
- Let the salmon rest, garnish with parsley or chives, and serve immediately with lemon wedges.
