Method
 

Steps to Prepare
  1. Cream the butter, brown sugar, and white sugar together until light and fluffy.
  2. Combine the wet ingredients including egg, extra yolk, and vanilla extract.
  3. Mix the dry ingredients in a separate bowl, then fold into the wet mixture.
  4. Preheat oven to 350°F and toast the kataifi until golden brown.
  5. Combine cooled toasted kataifi with pistachio cream, form small balls, and freeze.
  6. Assemble cookies by wrapping dough around the pistachio balls.
  7. Bake for 12-14 minutes until edges are golden brown.
  8. Cool on wire racks and sprinkle with flaky sea salt before serving.
