- Preheat your oven to 180℃ (350℉). Cream together butter, sugar, and vanilla until light and fluffy. Gradually add flour, egg, and yolk, mixing until smooth.
- Roll out the dough between parchment paper to 3mm thick. Cut out shapes with a bunny stencil and place on a lined tray, then bake for 10-12 minutes.
- Heat thickened cream until boiling. Remove and stir in white chocolate melts until smooth. Cool for 15 minutes, then blend in cream cheese.
- On a serving plate, place a shortbread layer, pipe ganache on top, place another bunny layer, and cover with ganache.
- Decorate with Easter eggs and flowers, placing them artfully on top.
