Step-by-Step Instructions for Easter Bunny Potato Croquettes
- In a large mixing bowl, combine the leftover mashed potatoes and cream cheese until smooth.
- Add the beaten eggs, Parmesan cheese, cheddar cheese, and onion powder, mixing thoroughly for about 2-3 minutes.
- Stir in ⅔ cup of Italian bread crumbs, folding them into the potato mixture gently.
- Mist bunny-shaped silicone molds with oil and sprinkle about ½ teaspoon of breadcrumbs into each mold.
- Spoon the potato mixture into each bunny mold, pressing down to fill all corners and smooth the tops.
- Sprinkle the remaining breadcrumbs over the tops of the filled molds and pat them down.
- Mist the tops of the filled molds with oil and place in the freezer for at least 1 hour.
- To pan-fry, heat about ¼ inch of oil in a skillet and fry the frozen croquettes for approximately 2 minutes on each side.
- For baking, preheat the oven to 400°F (205°C) and bake the frozen croquettes for 11-12 minutes.
