Method
 

Step-by-Step Instructions for Easter Bunny Potato Croquettes
  1. In a large mixing bowl, combine the leftover mashed potatoes and cream cheese until smooth.
  2. Add the beaten eggs, Parmesan cheese, cheddar cheese, and onion powder, mixing thoroughly for about 2-3 minutes.
  3. Stir in ⅔ cup of Italian bread crumbs, folding them into the potato mixture gently.
  4. Mist bunny-shaped silicone molds with oil and sprinkle about ½ teaspoon of breadcrumbs into each mold.
  5. Spoon the potato mixture into each bunny mold, pressing down to fill all corners and smooth the tops.
  6. Sprinkle the remaining breadcrumbs over the tops of the filled molds and pat them down.
  7. Mist the tops of the filled molds with oil and place in the freezer for at least 1 hour.
  8. To pan-fry, heat about ¼ inch of oil in a skillet and fry the frozen croquettes for approximately 2 minutes on each side.
  9. For baking, preheat the oven to 400°F (205°C) and bake the frozen croquettes for 11-12 minutes.
