- Heat a cast iron skillet over medium-high heat for about 2 minutes until hot. Add ground beef, breaking it apart with a wooden spoon. Cook for 7–10 minutes until browned and no longer pink. Drain excess grease and set aside.
- Sprinkle taco seasoning over cooked beef and pour in water. Stir well to combine. Continue cooking for an additional 3–5 minutes until the mixture thickens slightly.
- Prepare the cilantro lime rice following package instructions, which takes about 10–15 minutes. Zest and juice lime, then stir into the rice along with freshly chopped cilantro once fluffy. Set aside.
- To assemble the bowl, create a base of cilantro lime rice on a plate, using about 1 cup of rice. Spoon the seasoned beef mixture in the center.
- Top the beef with canned corn, followed by a scoop of black beans, shredded cheese, diced tomatoes, and jalapeño slices.
- Finish by adding sour cream and fresh cilantro on top. Serve with lime wedges and tortilla chips on the side.
