Ingredients
  

Marinade
  • 0.25 cups olive oil Can substitute with avocado oil.
  • 0.25 cups balsamic vinegar Red wine vinegar is an alternative.
  • 3 tablespoons lite soy sauce Use tamari for gluten-free.
  • 1 tablespoon Worcestershire sauce Check labels for gluten-free.
  • 2 tablespoons brown sugar Honey or maple syrup as substitutes.
  • 1 tablespoon Dijon mustard Yellow mustard can be used.
  • 1 teaspoon kosher salt Use half the amount of table salt when substituting.
  • 0.5 teaspoons ground black pepper White pepper is a similar flavor.
  • 2 cloves garlic Minced; can substitute with garlic powder.
For the Skewers
  • 1.5 pounds chicken breasts Cut into 1-inch chunks.
  • 1 medium red onion Cut into similar size as chicken.
  • 1 medium green bell pepper Cut into similar size as chicken.
  • 1 medium colored bell pepper Cut into similar size as chicken.

Method
 

Preparation Steps
  1. In a medium bowl, whisk together olive oil, balsamic vinegar, soy sauce, Worcestershire sauce, brown sugar, Dijon mustard, kosher salt, black pepper, and minced garlic until well combined.
  2. Cut chicken breasts into 1-inch chunks and add to the marinade, ensuring each piece is coated. Cover and refrigerate for at least 1 hour.
  3. Soak wooden skewers in cold water for about 30 minutes.
  4. Preheat your grill to medium-high heat (375°F to 450°F) and oil the grates.
  5. Remove chicken from marinade and thread onto skewers, alternating with pieces of red onion and bell peppers.
  6. Place kabobs on the grill and cook for 10 to 15 minutes, turning occasionally until the chicken's internal temperature reaches 165°F.
  7. Remove from grill and let kabobs rest for a couple of minutes before serving.
