Method
 

Step-by-Step Instructions
  1. Preheat your grill or grill pan to medium-high heat, about 400°F, for 5-10 minutes.
  2. In a large mixing bowl, mix the chopped zucchini, red and yellow bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil and season with salt and pepper. Toss to coat.
  3. Transfer the vegetable mix onto the preheated grill. Grill for 5-7 minutes, turning occasionally until tender and slightly charred.
  4. In a separate bowl, whisk together Greek yogurt, lemon juice, lemon zest, minced garlic, dill, and parsley for the herb sauce. Season with salt and pepper.
  5. Spread hummus on a whole wheat wrap, layer with grilled vegetables, spinach or arugula, and drizzle with the zesty herb sauce.
  6. Roll the wrap tightly from one edge, tucking in the sides, and slice in half diagonally for serving.
