Step-by-Step Instructions for Ground Turkey Lettuce Wraps
- In a large wok, heat over medium-high and combine vegetable oil and sesame oil. Allow the oils to shimmer, then add minced garlic, finely chopped shallots, and grated ginger. Stir-fry for about 2 minutes or until fragrant.
- Add water chestnuts, bamboo shoots, shiitake mushrooms, and julienned carrots into the wok. Stir-fry everything for approximately 4 minutes until vegetables are tender-crisp. Transfer the vegetable mixture into a bowl and set aside.
- In the same preheated wok, add additional vegetable oil if needed, then incorporate ground turkey. Break it up with a spatula and stir-fry for around 4–5 minutes or until the turkey is no longer pink.
- Return the reserved vegetable mixture to the wok with the cooked turkey. Add hoisin sauce and soy sauce. Stir together and continue cooking for another 2 minutes. Taste and season with kosher salt and black pepper.
- To assemble, take a butter leaf lettuce leaf and spoon about 2-3 tablespoons of the turkey filling into the center. Top with sliced green onions and cashews if desired. Drizzle with extra hoisin sauce and wrap tightly.
