Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a cupcake pan with paper liners.
  2. Whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. In a separate bowl, whisk together the eggs, vegetable oil, buttermilk, and vanilla until smooth. Combine with dry ingredients.
  4. Fill each cupcake liner about two-thirds full with batter. Bake for 18-20 minutes until a toothpick inserted comes out clean.
  5. Heat the jam gently in a saucepan until it becomes liquid. Let it cool slightly.

  7. Fill each well with the jam until just full.
  8. Beat the softened butter for the frosting until creamy, then mix in powdered sugar, heavy cream, and red food coloring until fluffy.
