- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine ricotta cheese, finely chopped onion, one egg, and fresh parsley. Season with salt and pepper to taste. Mix in half of the mozzarella and Parmesan cheese.
- In another bowl, mix the marinara sauce with water, reserving about ¾ cup for the bottom of the baking dish.
- Grease a 13x9-inch baking dish. Pour the reserved marinara sauce into the bottom.
- Fill the uncooked manicotti shells with the cheese mixture and arrange them in the baking dish over the marinara sauce.
- Pour the remaining marinara sauce over the filled shells.
- Cover the baking dish with aluminum foil and bake for about 50 minutes.
- Uncover the dish, sprinkle remaining mozzarella and Parmesan cheese over the top, and bake for an additional 10-15 minutes.
