Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ricotta cheese, finely chopped onion, one egg, and fresh parsley. Season with salt and pepper to taste. Mix in half of the mozzarella and Parmesan cheese.
  3. In another bowl, mix the marinara sauce with water, reserving about ¾ cup for the bottom of the baking dish.
  4. Grease a 13x9-inch baking dish. Pour the reserved marinara sauce into the bottom.
  5. Fill the uncooked manicotti shells with the cheese mixture and arrange them in the baking dish over the marinara sauce.
  6. Pour the remaining marinara sauce over the filled shells.
  7. Cover the baking dish with aluminum foil and bake for about 50 minutes.
  8. Uncover the dish, sprinkle remaining mozzarella and Parmesan cheese over the top, and bake for an additional 10-15 minutes.
