  • 4 ounces feta cheese, crumbled can substitute with goat cheese
  • 2 tablespoons extra virgin olive oil for sautéing
  • 3 cloves garlic, minced fresh preferred
  • 1 teaspoon dried oregano or Italian seasoning
  • 1 teaspoon paprika smoked paprika for extra flavor
  • 1 teaspoon red pepper flakes optional, adjust to taste

  • 2 cups cherry tomatoes, halved can substitute with grape or diced
  • 2 tablespoons fresh parsley, chopped or basil/cilantro
  • 1 tablespoon lemon juice freshly squeezed

Method
 

Step-by-Step Instructions
  1. Rinse the shrimp under cold water and pat dry with a paper towel before setting aside.
  2. Heat olive oil in a large skillet over medium heat for 1-2 minutes until shimmering.
  3. Add minced garlic to the hot oil and sauté for about 30 seconds until fragrant.
  4. Add shrimp to the skillet, sprinkle with salt, pepper, oregano, and paprika. Cook for 2-3 minutes on each side until pink and opaque.
  5. Stir in halved cherry tomatoes and simmer for 2 minutes until softened.
  6. Remove from heat and gently toss in crumbled feta until slightly melted.
  7. Fold in chopped parsley and lemon juice until well combined.
  8. Transfer to a serving platter, garnish with lemon wedges, and serve.
