Step-by-Step Instructions
  1. Thaw phyllo dough in the refrigerator overnight. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine crumbled feta, fresh herbs, and optional spices. Mix well.
  3. Lay out phyllo sheets, brush with olive oil, place a spoonful of filling, and roll tightly. Seal edges with more oil.
  4. Place rolls seam-side down on the baking sheet. Bake for about 20 minutes until golden brown and crispy.
  5. While rolls bake, heat honey in a small saucepan over low heat until warm. Serve with rolls.
