  • 1 cup Corn Use frozen corn for easy prep

  • 2 tablespoons Lime Juice Fresh lime preferred
  • 1/4 cup Cilantro Fresh herb, can be omitted

Directions
  1. Heat a large skillet over medium heat and add a drizzle of oil. Season the chicken breast with salt and pepper, then cook for 6-7 minutes on each side or until golden brown and no longer pink in the center.
  2. In the same skillet, add the diced red bell pepper and frozen corn, sautéing for about 3-5 minutes until the vegetables are tender.
  3. Once the chicken has rested, slice it into bite-sized pieces and return it to the skillet. Add the black beans and lime juice, stir everything together for about 2-3 minutes.
  4. Prepare meal prep containers by placing brown rice or quinoa at the bottom of each. Divide the chicken and vegetable mixture evenly among the bowls.
