- Preheat the oven to 180°C (355°F). Gather all ingredients and equipment.
- Heat a tablespoon of olive oil over medium-high heat. Add finely chopped onion and salt, sauté for 2–3 minutes until translucent.
- Add finely chopped garlic and optional lemon zest, stir for 30 seconds. Add baby spinach, cover to wilt for 30 seconds, then transfer to a mixing bowl.
- In the mixing bowl, crack in eggs, add parsley, dill, and pepper. Pour in cream and whisk until well combined.
- Gently fold in crumbled feta cheese and grated cheddar cheese, reserving some cheddar for topping.
- Grease the skillet with butter and pour the mixture into the skillet, spreading evenly. Top with reserved cheddar cheese.
- Bake in preheated oven for 25–30 minutes until edges are golden and center is set.
- Remove from oven, cool for a few minutes, slice into wedges, and serve warm, garnished with fresh herbs.
