Method
 

Step-by-Step Instructions
  1. Preheat the oven to 180°C (355°F). Gather all ingredients and equipment.
  2. Heat a tablespoon of olive oil over medium-high heat. Add finely chopped onion and salt, sauté for 2–3 minutes until translucent.
  3. Add finely chopped garlic and optional lemon zest, stir for 30 seconds. Add baby spinach, cover to wilt for 30 seconds, then transfer to a mixing bowl.
  4. In the mixing bowl, crack in eggs, add parsley, dill, and pepper. Pour in cream and whisk until well combined.
  5. Gently fold in crumbled feta cheese and grated cheddar cheese, reserving some cheddar for topping.
  6. Grease the skillet with butter and pour the mixture into the skillet, spreading evenly. Top with reserved cheddar cheese.
  7. Bake in preheated oven for 25–30 minutes until edges are golden and center is set.
  8. Remove from oven, cool for a few minutes, slice into wedges, and serve warm, garnished with fresh herbs.
