- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles in salted boiling water until al dente, about 8-10 minutes. Drain and lay them out to prevent sticking.
- In a mixing bowl, combine ricotta, shredded mozzarella, grated parmesan, chopped spinach, egg, garlic powder, and onion powder. Season with salt and pepper and mix until creamy.
- Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.
- Spread 2-3 tablespoons of the filling over each noodle and roll them up tightly. Place seam-side down in the baking dish.
- Pour the remaining marinara sauce over the roll-ups and sprinkle with remaining mozzarella cheese.
- Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly.
- Allow to cool for 5-10 minutes before serving. Garnish with fresh basil, if desired.
