  • 9 noodles Lasagna Noodles traditional or gluten-free
  • 15 oz Ricotta Cheese can substitute with cottage cheese
  • 1 cup Shredded Mozzarella Cheese part-skim or vegan options available
  • 1/2 cup Grated Parmesan Cheese Pecorino Romano for sharper flavor
  • 3 cups Fresh Spinach or frozen spinach, thawed and drained
  • 1 large Egg can use a flax egg for vegan option
  • 1 tsp Garlic Powder or fresh garlic for enhanced flavor
  • 1 tsp Onion Powder or fresh onion if preferred
  • to taste Salt and Pepper season to taste
For the Sauce
  • 3 cups Marinara Sauce store-bought or homemade
For the Garnish
  • to taste Fresh Basil optional; parsley can be a substitute

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles in salted boiling water until al dente, about 8-10 minutes. Drain and lay them out to prevent sticking.
  3. In a mixing bowl, combine ricotta, shredded mozzarella, grated parmesan, chopped spinach, egg, garlic powder, and onion powder. Season with salt and pepper and mix until creamy.
  4. Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.
  5. Spread 2-3 tablespoons of the filling over each noodle and roll them up tightly. Place seam-side down in the baking dish.
  6. Pour the remaining marinara sauce over the roll-ups and sprinkle with remaining mozzarella cheese.
  7. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly.
  8. Allow to cool for 5-10 minutes before serving. Garnish with fresh basil, if desired.
