  • 2 cups apples Granny Smith or Honeycrisp
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cardamom optional
  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 large eggs lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 cup plain yogurt or sour cream Greek yogurt is a great Alternative
For the Topping
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon

Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round baking pan.
  2. Peel, core, and thinly slice the apples, tossing them with lemon juice to prevent browning.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and cardamom.
  4. In another bowl, combine melted butter, sugar, eggs, vanilla, and yogurt; whisk until smooth.
  5. Gently fold the wet mixture into the dry ingredients until just combined.
  6. Spread half of the batter into the pan, layer with half the apples, then top with remaining batter and apples.
  7. Mix sugar and cinnamon for the topping and sprinkle over the apples.
  8. Bake for 40-45 minutes until golden brown and a toothpick comes out clean.
  9. Let it cool in the pan for 10-15 minutes before transferring to a wire rack to cool.
