For the Layers
  • 2 cups Shredded Mexican Blend Cheese Can mix with cheddar and Monterey Jack.
  • 6 count Flour Tortillas Can substitute with whole wheat or low-carb.
For Garnish
  • 1/4 cup Chopped Green Onions
  • 1/4 cup Chopped Fresh Cilantro Optional depending on taste.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add ground beef and cook until browned, about 6-8 minutes. Drain excess grease.
  3. Stir in taco seasoning mix and ¾ cup of water into the cooked beef. Let simmer for about 5 minutes.
  4. Mix in refried beans, salsa, and drained diced tomatoes. Stir until heated through, about 3-4 minutes.
  5. In a 9x13-inch baking dish, lay down two flour tortillas.
  6. Spread a third of the beef and bean mixture over the tortillas. Sprinkle a third of your shredded cheese on top.
  7. Repeat the layering process two more times, ensuring each layer is consistent.
  8. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes.
  9. Let rest for 5-10 minutes before slicing. Garnish with chopped green onions and cilantro before serving.
