Preparation Steps
- Preheat your oven to 375°F (190°C). Grease your baking dish.
- In a skillet, heat olive oil and sauté the chopped fresh vegetables for 5-7 minutes until tender. Season with salt and pepper.
- In a mixing bowl, combine ricotta cheese, egg, and herbs. Fold in half of the sautéed vegetables.
- Spread marinara sauce on the bottom of the baking dish, then layer with lasagna noodles.
- On the noodles, spread half of the ricotta mixture, followed by the remaining vegetables and mozzarella cheese. Repeat the layers.
- Add a final layer of noodles, then top with marinara sauce and mozzarella cheese.
- Cover with foil and bake for 45 minutes, then remove foil and bake for another 15 minutes until golden.
- Let the lasagna cool for 10-15 minutes before slicing.
