Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Grease your baking dish.
  2. In a skillet, heat olive oil and sauté the chopped fresh vegetables for 5-7 minutes until tender. Season with salt and pepper.
  3. In a mixing bowl, combine ricotta cheese, egg, and herbs. Fold in half of the sautéed vegetables.
  4. Spread marinara sauce on the bottom of the baking dish, then layer with lasagna noodles.
  5. On the noodles, spread half of the ricotta mixture, followed by the remaining vegetables and mozzarella cheese. Repeat the layers.
  6. Add a final layer of noodles, then top with marinara sauce and mozzarella cheese.
  7. Cover with foil and bake for 45 minutes, then remove foil and bake for another 15 minutes until golden.
  8. Let the lasagna cool for 10-15 minutes before slicing.
