- Preheat your oven to 180°C (350°F) and prepare your baking dish with parchment paper.
- Grate two medium zucchinis into a bowl and press to eliminate excess moisture.
- In a large bowl, combine self-raising flour, salt, pepper, and chopped onion, then fold in grated cheddar cheese.
- Gently fold the drained zucchini into the dry mixture.
- In another bowl, beat together the eggs, vegetable oil, and fresh parsley.
- Pour the wet mixture into the dry ingredients and gently combine until just blended.
- Transfer the batter to your prepared baking dish, smoothing it out for even baking.
- Bake in the oven for 30-35 minutes until the top is golden brown.
- Allow to cool for about 10 minutes before transferring to a wire rack.
- Slice into squares and serve warm or at room temperature.
