Batter
  • 2 medium Zucchini drain excess water
  • 1 cup Self-Raising Flour can substitute with gluten-free blend
  • 1 medium Onion preferably caramelized
  • 1 cup Cheddar Cheese can swap for mozzarella or feta
  • 3 large Eggs acts as a binder
  • 1/4 cup Vegetable Oil keeps the slice moist
  • 1/4 cup Parsley can replace with basil or thyme
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Steps to Prepare
  1. Preheat your oven to 180°C (350°F) and prepare your baking dish with parchment paper.
  2. Grate two medium zucchinis into a bowl and press to eliminate excess moisture.
  3. In a large bowl, combine self-raising flour, salt, pepper, and chopped onion, then fold in grated cheddar cheese.
  4. Gently fold the drained zucchini into the dry mixture.
  5. In another bowl, beat together the eggs, vegetable oil, and fresh parsley.
  6. Pour the wet mixture into the dry ingredients and gently combine until just blended.
  7. Transfer the batter to your prepared baking dish, smoothing it out for even baking.
  8. Bake in the oven for 30-35 minutes until the top is golden brown.
  9. Allow to cool for about 10 minutes before transferring to a wire rack.
  10. Slice into squares and serve warm or at room temperature.
