- In a medium bowl or a mason jar, combine ½ cup of extra virgin olive oil, ¼ cup of red wine vinegar, and 2 tablespoons of lemon juice. Whisk together for about 30 seconds until well combined.
- Whisk in 1 tablespoon of Dijon mustard and 1 tablespoon of honey (or sugar). Continue whisking for another 30 seconds until the dressing is silky and emulsified.
- Add 2 cloves of minced garlic, 1 teaspoon of dried oregano, and 1 teaspoon of dried basil. If desired, add ¼ teaspoon of red pepper flakes, ½ teaspoon of kosher salt, and ¼ teaspoon of black pepper. Whisk until fully integrated.
- Taste your dressing and adjust salt, pepper, or honey for desired flavor balance.
- Cover and refrigerate for at least 15 minutes to allow flavors to meld together.
- After chilling, shake or whisk again before serving to re-emulsify any separated ingredients.
