  1. Begin by cutting the chicken breasts into 1-inch chunks, dice the onion and red bell pepper finely, break the cauliflower into small florets, and mince the garlic. Grate the fresh ginger.
  2. In a medium pan, heat 2 tablespoons of coconut oil over medium heat. Sauté the diced onion for about 5 minutes until translucent. Add the minced garlic, grated ginger, and spices, stirring until fragrant.
  3. Transfer the cooked onion mixture into your slow cooker. Incorporate chopped bell pepper, seasoned chicken, cauliflower, tomato sauce, tomato paste, and butter, mixing thoroughly.
  4. Cover the slow cooker and set it to high for 1.5 to 2.5 hours, or low for 4 to 6 hours. The chicken is ready when its internal temperature is 165°F and tender.
  5. Once cooking time is up, remove the chicken from the slow cooker and let it rest for a few minutes, then cut into bite-sized pieces.
  6. Cook remaining vegetables and sauce mixture in the slow cooker on high for an additional 30 to 60 minutes. Stir in half-and-half and yogurt to enrich the sauce.
