- In a large saucepan, combine the chopped fresh apricots, a splash of water, and honey or maple syrup over medium-high heat. Stir to ensure the apricots are well-coated, then bring to a gentle simmer.
- Continue to cook the apricot mixture for about 5 to 8 minutes, stirring occasionally. As the apricots break down, they’ll transform into a chunky sauce.
- Using a fork or potato masher, crush the softened apricots until you achieve a smooth paste. Optionally, leave some chunks for a rustic finish.
- Stir in the chia seeds and optional cinnamon, ensuring they are evenly distributed throughout the mixture. Allow to cook for an additional 3 minutes over medium heat.
