  • 2 medium Shallots finely diced
  • 2 cloves Garlic minced
  • 8 ounces Goat Cheese softened
  • 2 tablespoons Fresh Herbs chopped (thyme, rosemary, or parsley)
  • 2 tablespoons Olive Oil
  • Salt and Pepper to taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the thawed puff pastry to about 1/8 inch thick. Cut into 3-4 inch squares and place on a lined baking sheet.
  3. In a skillet, add olive oil and sauté shallots for 3-4 minutes until translucent. Then, add garlic and cook for 1 more minute.
  4. Add mushrooms to the skillet and cook for 5-7 minutes until tender and golden brown. Season with salt and pepper.
  5. Transfer sautéed mushroom mixture to a bowl. Add goat cheese and chopped herbs, mixing until well combined.
  6. Place the mushroom and goat cheese filling onto the center of each puff pastry square, leaving a clear border.
  7. Bake for 15-20 minutes or until golden and puffed up.
  8. Allow to cool for a few minutes on the baking sheet before serving.
