- Preheat your oven to 400°F (200°C).
- Roll out the thawed puff pastry to about 1/8 inch thick. Cut into 3-4 inch squares and place on a lined baking sheet.
- In a skillet, add olive oil and sauté shallots for 3-4 minutes until translucent. Then, add garlic and cook for 1 more minute.
- Add mushrooms to the skillet and cook for 5-7 minutes until tender and golden brown. Season with salt and pepper.
- Transfer sautéed mushroom mixture to a bowl. Add goat cheese and chopped herbs, mixing until well combined.
- Place the mushroom and goat cheese filling onto the center of each puff pastry square, leaving a clear border.
- Bake for 15-20 minutes or until golden and puffed up.
- Allow to cool for a few minutes on the baking sheet before serving.
