Preparation Steps
  1. Melt 2 tablespoons of butter in a skillet over medium heat. Add 2 sliced Granny Smith apples, 1 teaspoon of cinnamon, and 2 tablespoons of sugar. Cook for 5-10 minutes until apples are tender.
  2. In a mixing bowl, whisk together 1 cup of flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and a pinch of salt. Stir in 2 tablespoons of sugar.
  3. In another bowl, whisk together 1 cup of buttermilk and 1 egg until smooth. Mix in the melted butter from the apples and then add to the dry ingredients. Stir until just combined.
  4. Preheat a skillet over medium heat and pour 1/4 cup of batter for each pancake. Cook until bubbles form, then flip and cook for another 1-2 minutes.
  5. Stack pancakes on a plate, layer with roasted apples, sprinkle granola, dust with powdered sugar, and drizzle with maple syrup before serving.
