- Preheat your oven to 400°F (200°C) and prepare a large baking dish or oven-safe skillet.
- In your baking dish, combine coconut milk, red curry paste, soy sauce, rice vinegar, honey, sesame oil, minced garlic, and freshly grated ginger. Whisk until smooth.
- Stir in chopped bok choy and sliced zucchini to the broth mixture until the vegetables are well-coated.
- Carefully place frozen dumplings in a single layer on top of the veggie mixture, pressing them gently into the broth.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- After 20 minutes, remove the foil and bake for an additional 5 to 10 minutes until the dumplings are golden.
- Garnish with optional sesame seeds, green onions, or cilantro and serve over jasmine rice or noodles.
