Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a large baking dish or oven-safe skillet.
  2. In your baking dish, combine coconut milk, red curry paste, soy sauce, rice vinegar, honey, sesame oil, minced garlic, and freshly grated ginger. Whisk until smooth.
  3. Stir in chopped bok choy and sliced zucchini to the broth mixture until the vegetables are well-coated.
  4. Carefully place frozen dumplings in a single layer on top of the veggie mixture, pressing them gently into the broth.
  5. Cover the baking dish with aluminum foil and bake for 20 minutes.
  6. After 20 minutes, remove the foil and bake for an additional 5 to 10 minutes until the dumplings are golden.
  7. Garnish with optional sesame seeds, green onions, or cilantro and serve over jasmine rice or noodles.
