Cooking Steps
- In a medium saucepan, heat 2 tablespoons of oil over medium-high heat until shimmering.
- Add 1 teaspoon of red pepper flakes, 2 minced garlic cloves, and 1 tablespoon of grated ginger. Sauté for 1-2 minutes until fragrant.
- Stir in 2 tablespoons of curry powder and cook for 30 seconds to bloom the spices.
- Pour in 1 can of coconut milk, 1 tablespoon of sugar, 1 teaspoon of ground cumin, and 1 teaspoon of turmeric powder. Stir and simmer for 3-5 minutes until thickened.
- Remove from heat and stir in 2 tablespoons of soy sauce and the juice of 1 lime.
- Serve over rice or quinoa, or let it cool for storage.
