  • 1 cup Boiling Water Essential for dissolving sugar.
  • 2 cups Cold Water Add more to adjust flavor strength.
  • 1 small to medium Cucumber Peel if not organic.
  • 7-8 lemons Lemon Juice Yields about 1 cup; bottled juice can be used.

Method
 

Step-by-Step Instructions
  1. In a heat-safe container, combine 1 cup of sugar with 1 cup of boiling water and stir until dissolved. Set aside to cool.
  2. Cut cucumber into 3-4 pieces, blend with 1 cup of cold water until smooth.
  3. Strain blended cucumber over a bowl or pitcher to extract about 1.25 cups of juice.
  4. Juice 7-8 lemons to yield about 1 cup, avoiding seeds.
  5. In a pitcher, combine cucumber juice, lemon juice, cooled sugar water, and 2 cups of cold water. Stir well.
  6. Chill in the refrigerator for at least 30 minutes or serve immediately over ice.
