Ingredients
  

For the Curry
  • 2 tablespoons olive oil or Coconut/Vegetable Oil
  • 1 large yellow onion chopped
  • 2 medium carrots sliced
  • 2 medium potatoes diced
  • 1 pound chicken breasts cubed
  • 1 tablespoon ground ginger
  • 3 cloves garlic minced
  • 1 cup coconut milk 13.5 oz can
  • 1/4 cup peanut butter creamy
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice optional
  • additional vegetables optional, e.g. bell peppers, snap peas

Method
 

Cooking Instructions
  1. Heat the oil in a skillet over medium-high heat for 1-2 minutes until shimmering.
  2. Sauté the onions, carrots, and potatoes for 4-5 minutes until starting to soften.
  3. Add chicken, ground ginger, and minced garlic and cook for 2 minutes until chicken is no longer pink.
  4. Pour in coconut milk, reduce heat to medium-low, and simmer for 10 minutes.
  5. Stir in peanut butter, brown sugar, soy sauce, and lime juice; cook for another 4-5 minutes.
  6. Serve over rice or noodles, garnished with peanuts or herbs if desired.
