- Preheat your oven to 400ºF (200ºC). Gather all ingredients and equipment.
- In a large sauté pan over medium heat, add olive oil and melt unsalted butter. Sauté the onion, celery, and bell pepper for about 6 minutes until tender.
- In a mixing bowl, combine cooled vegetable mixture with mayonnaise, breadcrumbs, lemon juice, and Worcestershire sauce. Fold in lump crab meat.
- Trim the salmon to ensure even pieces. Slice each filet lengthwise and season with salt and pepper.
- Spread crab filling over each salmon piece, roll into pinwheels, and secure with toothpicks if necessary.
- Cut each pinwheel in half and place on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15 to 18 minutes until salmon is cooked through.
- Let the pinwheels rest, then garnish with parsley and chives before serving.
