Step-by-Step Instructions
  1. Preheat your oven to 400ºF (200ºC). Gather all ingredients and equipment.
  2. In a large sauté pan over medium heat, add olive oil and melt unsalted butter. Sauté the onion, celery, and bell pepper for about 6 minutes until tender.
  3. In a mixing bowl, combine cooled vegetable mixture with mayonnaise, breadcrumbs, lemon juice, and Worcestershire sauce. Fold in lump crab meat.
  4. Trim the salmon to ensure even pieces. Slice each filet lengthwise and season with salt and pepper.
  5. Spread crab filling over each salmon piece, roll into pinwheels, and secure with toothpicks if necessary.
  6. Cut each pinwheel in half and place on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 15 to 18 minutes until salmon is cooked through.
  8. Let the pinwheels rest, then garnish with parsley and chives before serving.
