Ingredients
  

For the Protein
  • 1 lb Ground Beef can be substituted with ground turkey or chicken
For the Vegetables
  • 1 small crown Broccoli cut into florets
  • 1 Bell Pepper thinly sliced
  • 1 small Onion diced
  • 3 cloves Garlic minced
For the Sauce
  • ½ cup Sriracha reduce for a milder kick
  • 3 tbsp Coconut Sugar brown sugar can be used in a pinch
  • 3 tbsp Honey maple syrup for vegan option
  • ¼ cup Tamari swap with soy sauce if needed
  • ¼ cup Unseasoned Rice Vinegar apple cider vinegar works too
For the Noodles
  • 8 oz Rice Noodles whole grain or gluten-free options available
For Cooking and Garnishing
  • Avocado Oil ideal for sautéing
  • ½ tsp Salt essential for flavor
  • ½ tsp Crushed Red Pepper Flakes adjust according to heat preference
  • Sliced Green Onions for garnish
  • Sesame Seeds for garnish

Method
 

Basic Preparation
  1. Bring a large stockpot of salted water to a rolling boil. Add rice noodles and cook according to package instructions, about 4-6 minutes. Drain and set aside.
  2. In a medium bowl, whisk together sriracha, coconut sugar, honey, tamari, and rice vinegar until smooth. Set aside.
  3. Heat avocado oil in a large skillet over medium heat. Add ground beef, cooking for about 5 minutes until browned.
  4. Drain excess grease. Add diced onion, cooking for 2-3 minutes, then stir in minced garlic and crushed red pepper flakes, cooking for another minute.
  5. Pour the firecracker sauce over the beef mixture, stir well, and let simmer for 6-8 minutes until thickened.
  6. Add chopped broccoli and sliced bell pepper to the skillet, cooking for another 2-3 minutes until vegetables are tender yet crisp.
  7. Add ⅓ cup of water to the skillet, stirring and simmering for an additional 2 minutes.
  8. Fold the cooked noodles into the skillet with the beef and veggies, stirring gently for 1-2 minutes until heated through.
  9. Serve hot, garnished with sliced green onions and sesame seeds.
