  • 6 pieces corn tortillas bake until golden
  • 2 cups rotisserie chicken shredded
  • 1 cup salsa your favorite brand
  • 2 tablespoons taco seasoning

  • 1 can black beans rinsed
  • 1 cup corn
  • 1 cup cheese (cheddar or Mexican blend) add while chicken is warm
For the Fresh Toppings
  • 1/4 cup fresh cilantro chopped
  • 1 cup diced tomatoes or avocados
  • optional garnishes sliced jalapeños or sour cream

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 450°F (230°C).
  2. Arrange corn tortillas on a baking sheet and brush both sides with canola oil.
  3. Bake the tortillas for about 10 minutes, flipping halfway through until golden and crisp.
  4. In a saucepan over medium heat, combine warmed chicken, salsa, taco seasoning, black beans, and corn. Heat for about 5 minutes.
  5. Spoon about 1/2 cup of the chicken mixture onto each tortilla. Sprinkle 1/4 cup of cheese on top.
  6. Return the tostadas to the oven and bake for an additional 5 minutes to melt the cheese.
  7. Remove from the oven and garnish with fresh cilantro and diced tomatoes. Serve immediately.
