Ingredients
  

Marinade
  • 3 Tbsp Fresh Lemon Juice Adds a bright zing; vinegar can be a substitute
  • 2 Tbsp Olive Oil Provides a rich texture; avocado oil is a substitute
  • 2 tsp Fresh Thyme Chopped; dried thyme or rosemary can be used
  • Canola Oil Used for oiling grill grates; vegetable oil is a substitute
Kebabs
  • 1 package Extra-Firm Tofu 14 ounces; tempeh or seitan are alternatives
  • 1 pint Cherry Tomatoes Can replace with grape tomatoes
  • 4 small Zucchini Halved and sliced; yellow squash can be mixed in
  • Kosher Salt Essential for seasoning; any salt can work
  • Freshly Ground Black Pepper Essential for seasoning; any pepper can work

Method
 

Instructions
  1. Preheat the grill to medium-high heat (375°F to 400°F) and oil the grill grates with canola oil.
  2. In a large mixing bowl, combine lemon juice, olive oil, and thyme, whisk until blended.
  3. Cut tofu into cubes and slice zucchini. Add to marinade with cherry tomatoes and toss gently, seasoning with salt and pepper.
  4. Skewer the marinated ingredients in an alternating pattern.
  5. Grill the kebabs for 6 to 8 minutes, turning occasionally, until zucchini is tender and tofu is crisp.
  6. Serve hot, ideally with a side salad or rice.

Notes
