Step-by-Step Instructions
  1. Gather fresh dandelion petals from pesticide-free areas. Rinse gently in cold water and set aside to dry.
  2. In a pot, combine cleaned dandelion petals with water, using about 4 cups of water for every 2 cups of petals. Bring to a boil over medium heat, then simmer for about 15 minutes and steep for at least 3 hours, preferably overnight.
  3. Strain the mixture through a fine mesh sieve into a bowl, pressing down on the petals to extract all infused water.
  4. Mix the dandelion-infused water with lemon juice, honey or maple syrup, pectin, and sugar in a clean pot. Stir until well combined.
  5. Bring the mixture to a rolling boil over medium-high heat, stirring continuously for 1-2 minutes until it thickens slightly.
  6. Use the cold plate test to check consistency. If it holds its shape without running, pour into sterilized jars.
  7. Pour jelly into jars, leaving 1/4 inch headspace, and seal with sterilized lids.
  8. Allow jars to cool at room temperature before refrigerating or freezing.
