  • 2 tablespoons Lemon Juice
  • 1/4 cup Fresh Parsley chopped, for garnish

Step-by-Step Instructions
  1. Season the salmon fillets with salt and freshly ground black pepper on both sides and allow to sit for about 10 minutes.
  2. Heat olive oil and unsalted butter in a large skillet over medium-high heat until the butter melts and foams.
  3. Cook the salmon fillets skin-side down for 3-4 minutes to form a golden crust, then flip and cook for another 3-4 minutes until cooked through.
  4. Reduce heat and add remaining butter, followed by garlic and mushrooms, sauté for 5 minutes until mushrooms are tender.
  5. Add fresh spinach and cook for 2 minutes until wilted, combining with the mushrooms and garlic.
  6. Pour in heavy cream and stir, bringing to a gentle simmer for 2 minutes to meld flavors.
  7. Mix in parmesan cheese, Italian seasoning, and lemon juice, simmer for 3-4 minutes until thickened.
  8. Return salmon to the skillet, spoon sauce over the top, and gently reheat for 2-3 minutes.
  9. Garnish with chopped parsley and serve immediately.
