Method
 

Step-by-Step Instructions
  1. Begin by boiling quartered baby potatoes in a large pot of salted water until tender, about 12-15 minutes. Drain and let cool slightly before gently smashing each one.
  2. Pat the sirloin steak dry, season with salt and pepper, and heat a skillet over medium-high heat with olive oil. Sear steak bites for 2-3 minutes on each side until golden. Tent with foil to keep warm.
  3. In the same skillet, add more olive oil if needed and place the smashed potatoes in a single layer. Cook undisturbed for 4-5 minutes until golden and crispy, then flip and cook for another 3-4 minutes.
  4. Lower the heat, add butter and minced garlic to the skillet, and sauté for 1-2 minutes until fragrant.
  5. Return the steak bites to the skillet and toss gently with the potatoes and garlic butter sauce. Heat through for 1-2 minutes.
  6. Transfer to a serving platter and sprinkle with chopped parsley before serving.
