Step-by-Step Instructions
- Begin by boiling quartered baby potatoes in a large pot of salted water until tender, about 12-15 minutes. Drain and let cool slightly before gently smashing each one.
- Pat the sirloin steak dry, season with salt and pepper, and heat a skillet over medium-high heat with olive oil. Sear steak bites for 2-3 minutes on each side until golden. Tent with foil to keep warm.
- In the same skillet, add more olive oil if needed and place the smashed potatoes in a single layer. Cook undisturbed for 4-5 minutes until golden and crispy, then flip and cook for another 3-4 minutes.
- Lower the heat, add butter and minced garlic to the skillet, and sauté for 1-2 minutes until fragrant.
- Return the steak bites to the skillet and toss gently with the potatoes and garlic butter sauce. Heat through for 1-2 minutes.
- Transfer to a serving platter and sprinkle with chopped parsley before serving.

Notes
Don’t skimp on seasoning. Let the steak rest before slicing for best results. Avoid overcrowding the skillet with potatoes for optimal crispiness.
