  • 1/4 cup Sweet Chili Sauce Mae Ploy preferred
  • 1 tablespoon Sriracha Adjust for heat preference
  • 2 tablespoons Fresh Lime Juice Use fresh, not bottled
For the Garnish
  • 2 tablespoons Scallions Thinly sliced; chives optional

Step-by-Step Instructions
  1. Soak wooden skewers in water for at least 30 minutes.
  2. Slice the scallions thinly for garnishing. Pat the shrimp dry with a paper towel.
  3. Whisk together mayonnaise, sweet chili sauce, sriracha, and fresh lime juice in a medium bowl until smooth.
  4. Thread approximately 4-5 shrimp onto each soaked skewer.
  5. Combine canola oil and garlic powder, then brush or toss the shrimp skewers.
  6. Preheat grill to high heat. Grill shrimp skewers for 2-3 minutes on each side until pink and opaque.
  7. Remove skewers from grill, brush with reserved bang bang sauce, and sprinkle with scallions.
