Step-by-Step Instructions
  1. Begin by cutting boneless, skinless chicken thighs into 1-inch pieces, ensuring they’re uniform for even cooking.
  2. In a medium bowl, whisk together soy sauce, mirin, sake, brown sugar, grated fresh ginger, minced garlic, and freshly ground black pepper.
  3. Pour the marinade over the chicken pieces, ensuring they are thoroughly coated. Cover the bowl and refrigerate for at least 30 minutes.
  4. While the chicken marinates, preheat your grill to medium-high heat, around 400°F (200°C).
  5. Once marinated, thread the chicken pieces onto soaked wooden skewers, alternating with 2-inch pieces of green onions.
  6. Carefully place the skewers on the preheated grill. Grill them for about 5-7 minutes on each side, turning occasionally.
