Step-by-Step Instructions
- Begin by cutting boneless, skinless chicken thighs into 1-inch pieces, ensuring they’re uniform for even cooking.
- In a medium bowl, whisk together soy sauce, mirin, sake, brown sugar, grated fresh ginger, minced garlic, and freshly ground black pepper.
- Pour the marinade over the chicken pieces, ensuring they are thoroughly coated. Cover the bowl and refrigerate for at least 30 minutes.
- While the chicken marinates, preheat your grill to medium-high heat, around 400°F (200°C).
- Once marinated, thread the chicken pieces onto soaked wooden skewers, alternating with 2-inch pieces of green onions.
- Carefully place the skewers on the preheated grill. Grill them for about 5-7 minutes on each side, turning occasionally.
- During the last few minutes of grilling, brush any remaining marinade over the skewers.
- Once cooked, remove the skewers from the grill and let them rest for a few minutes. Serve hot, garnished with additional green onions.

Notes
Marinate the chicken the night before for the best flavor. These skewers are great for easy weeknight dinners or gatherings.
