Method
 

Instructions
  1. Cook the Orzo: Bring a large pot of salted water to a boil. Add orzo pasta and cook for 8-10 minutes until al dente. Drain and set aside to cool.
  2. Prepare the Marinade: Whisk together olive oil, lemon juice, oregano, garlic powder, and a pinch of salt and pepper.
  3. Marinate the Chicken: Place chicken in a resealable bag, cover with marinade, and refrigerate for at least 30 minutes.
  4. Grill the Chicken: Preheat the grill to medium-high heat. Grill chicken for 6-7 minutes on each side until cooked through. Let rest for 5 minutes before slicing.
  5. Assemble the Salad: In a large bowl, combine cooled orzo, avocado, tomatoes, onion, and parsley. Toss gently.
  6. Make the Dressing: Mix bacon, mayonnaise, honey, mustard, vinegar, salt, and pepper in a bowl until smooth.
  7. Combine and Serve: Drizzle dressing over salad, toss gently, and top with sliced chicken before serving.
