Step‑by‑Step Instructions
  1. In a small bowl, combine ketchup with chopped chipotle chile, adobo sauce, and balsamic vinegar. Mix these ingredients thoroughly to create chipotle ketchup.
  2. Take two slices of hearty bread and layer one slice of white American cheese on one piece. Add sliced leftover meatloaf and top with another slice of cheese and pickles if desired. Close with another slice of bread.
  3. Heat a non-stick skillet over medium heat for about 2 minutes. Butter one side of each sandwich generously.
  4. Place the sandwiches buttered-side down into the pan. Press down gently and cook for 4-5 minutes until bottoms are golden brown.
  5. Carefully flip each sandwich over, butter the top slices, and cover the skillet with aluminum foil. Cook for another 4-5 minutes until cheese is melted and the other side is golden brown.
  6. Once browned and cheese is melted, remove sandwiches from the skillet, cut in half, and serve warm with chipotle ketchup.
