Ingredients
  

For the Dough

  • 1 packet Quick Rise Yeast Make sure it’s activated in warm water.
  • 1 teaspoon Salt Essential for flavor.
  • 1 cup Warm Water (110°F) Activated yeast requires this temperature.
  • 2 tablespoons Olive Oil Vegetable oil works as a substitute.
For the Tzatziki Sauce
  • 1 cup Plain Greek Yogurt Dairy-free yogurt can be used.
  • 2 cloves Garlic (Minced) Fresh garlic is best.
  • 1 tablespoon Fresh Dill Can substitute with mint or oregano.
  • 2 tablespoons Lemon Juice Freshly squeezed recommended.
  • 1 medium English Cucumber Can swap with other cucumbers.
For the Toppings
  • 1 cup Gyro Meat Grilled chicken or vegetarian can be used.
  • 1 medium Red Onion/Shallot Green onions can be a milder alternative.
  • 1 cup Cherry Tomatoes Plum or grape tomatoes can work.
  • 1 medium Bell Pepper Any variety.
  • 1 cup Artichoke Hearts Canned or fresh options are great.
  • 1 cup Portabella Mushrooms Other mushrooms or none for vegetarian.

Method
 

Preparation Steps
  1. In a small bowl, combine quick rise yeast with warm water. Let sit for 10 minutes until frothy.
  2. In a large bowl, whisk flour and salt. Add activated yeast mixture and olive oil, mixing until a shaggy dough forms.
  3. Shape the dough into a ball, place in a greased bowl, and cover. Let rise for about 1 hour until doubled.
  4. Preheat your pizza stone under the broiler on high for 30 minutes, then lower to 375°F for another 30 minutes.
  5. Slice cherry tomatoes, bell peppers, and artichoke hearts, drizzle with olive oil, and roast for 10-15 minutes.
  6. Combine Greek yogurt, minced garlic, dill, and lemon juice in a bowl. Stir and chill for tzatziki.
  7. Once risen, punch the dough down, knead briefly, and flatten into a disk. Let rest for 10-30 minutes.
  8. Roll out the dough, brush with Greek marinade, layer tzatziki, top with meat and roasted vegetables.
  9. Bake assembled pizza on the pizza stone for 10-15 minutes, then switch to broil for an additional 5-10 minutes.
  10. Remove from oven, cool slightly, then garnish with cucumber slices and drizzle with extra tzatziki.
