Ingredients

For the Base
  • 1 cup Peanuts Can substitute with any nut or nut butter for a different taste.
  • 1 cup Medjool Dates If unavailable, other pitted dates work but Medjool's soft texture is preferable.
  • 1 3 Cocoa Powder Unsweetened cocoa or dark chocolate powder are great alternatives.
  • 1/2 cup Peanut Butter Substitute with almond butter or sunflower seed butter for allergy-friendly options.
  • 1 cup Gluten-Free Rolled Oats Use regular oats if gluten is not a concern.
For Decoration
  • 2 sticks Licorice Bars Consider chocolate-covered pretzels or fruit leather instead if unavailable.
  • 1 cup Candy Eyeballs Replace with chocolate chips or other fun candies as desired.

Equipment

  • Food Processor

Method

Step-by-Step Instructions for Halloween Monster Energy Balls
  1. Begin by placing the pitted Medjool dates into your food processor. Pulse until the dates form a smooth, sticky paste, which should take about 30 seconds. Scrape down the sides as needed for an even consistency.
  2. Add the gluten-free rolled oats, cocoa powder, peanut butter, and peanuts to the food processor. Blend on medium speed for about 1-2 minutes until the mixture is well-combined and begins to clump together.
  3. Scoop out portions and roll them into 1-inch balls using your hands.
  4. While the energy balls are still sticky, gently press two candy eyeballs into the center of each ball.
  5. Cut your licorice bars into thin strips. Shape these strips into legs and wings for your monster balls.
  6. Carefully insert the shaped licorice into the sides of the energy balls, pressing gently to ensure they stay put.
  7. Place your decorated Halloween Monster Energy Balls onto a plate or tray and refrigerate for 15-30 minutes.
