Teriyaki Sauce
  • 3/4 cup low-sodium soy sauce opt for coconut aminos for gluten-free
  • 1/2 cup water
  • 1/4 cup honey substitute with sugar-free maple syrup for lower sugar
  • 1/2 tsp ground ginger fresh ginger can be used for bolder taste
  • 2 cloves garlic, minced keep minced garlic in olive oil for convenience
  • 2 tbsp cornstarch substitutes include all-purpose flour or potato starch
Casserole
  • 1 lb boneless, skinless chicken breasts can substitute with tofu or shrimp
  • 1 cup broccoli florets cauliflower is a great swap
  • 1 cup chopped carrots bell peppers or zucchini can also be used
  • 1 cup snow peas sugar snap peas can be a substitute
  • 3 cups cooked white rice consider brown rice, quinoa, or cauliflower rice

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 baking dish.
  2. In a medium saucepan, combine the ingredients for teriyaki sauce and bring to a gentle boil.
  3. Mix cornstarch with water, add to sauce to thicken, and set aside.
  4. Place chicken in the baking dish and surround with vegetables.
  5. Pour teriyaki sauce over the chicken and vegetables evenly.
  6. Cover with aluminum foil and bake for 30 minutes.
  7. Shred the chicken right in the baking dish after removing the foil.
  8. Stir in cooked rice and mix well with chicken and vegetables.
  9. Return to oven uncovered and bake for an additional 10 minutes.
  10. Cool for 5 minutes before serving with any remaining teriyaki sauce.
