- Preheat your oven to 350°F (175°C) and grease a 9×13 baking dish.
- In a medium saucepan, combine the ingredients for teriyaki sauce and bring to a gentle boil.
- Mix cornstarch with water, add to sauce to thicken, and set aside.
- Place chicken in the baking dish and surround with vegetables.
- Pour teriyaki sauce over the chicken and vegetables evenly.
- Cover with aluminum foil and bake for 30 minutes.
- Shred the chicken right in the baking dish after removing the foil.
- Stir in cooked rice and mix well with chicken and vegetables.
- Return to oven uncovered and bake for an additional 10 minutes.
- Cool for 5 minutes before serving with any remaining teriyaki sauce.
